Cowgirl Cookies

Cowgirl cookies are one of my FAVORITE cookies of all time! I remember eating them in elementary school when my friend Lindsey's mom would make them. She kept them in a tin like a fruit cake might come in and man- they were delicious! I just saw Lindsey last week and we counted: 40 years. We have been friends for 40 years. I have loved and baked these cookies for 40 years. You might want to get to baking so you start your 40 year love affair with them today.
Cowgirl Cookies
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp Baking Soda
1/2 tsp salt
1/2 tsp Baking Powder
2 cups quick oats
2 cups semi-sweet chocolate chips
Cream shortening and sugars- mix well. Add eggs- beat until light and fluffy. Add vanilla. Stir in dry ingredients. Dough will be CRUMBLY. Drop by rounded teaspoonfuls onto parchment covered cookie sheets.
Bake at 350 for about 10 minutes.
This recipe makes about 9 dozen cookies.
