This granola is so versatile- I only like oats and almonds so that's all I add- but options like sunflower seeds, coconut or dried cranberries could be added if that's your thing.

I've made this is large batches that take up two ½ sheet pans and half batches that just take up one- I find the ½ batch more manageable since I'm the only person at the Old Lady's house eating the granola. You could very easily package and give as gifts.

Homemade Granola

  • ¾ cup neutral oil- I use canola

  • 1/2 cup honey

  • 1 cup firmly packed brown sugar

  • 1 Tablespoon vanilla extract

  • pinch of salt

  • 8 cups of old-fashioned oats

  • 1-2 cups sliced almonds

Heat oven to 375º. In saucepan over medium heat combine oil, honey, brown sugar, vanilla and salt. Stir carefully until heated through. In very large bowl combine oats and nuts. Pour warm oil mixture over oat mix and stir until fully coated. Spread on a parchment lined sheet pan and bake for between 15-25 minutes. Stir several times so the oats get evenly toasted on all sides. Cool completely before adding optional dried fruit. Store in air tight container for 3 weeks.

Serve with yogurt for a delicious breakfast!
